Things are getting ZESTY!


Hello Beautiful,

The first time I herad that phrase, "things are getting ZESTY" I was in Louisiana in May and I swear it was 110 degrees! Since then I use the phrase when things are getting AWESOME! and today's Summer Saturday Salad is just that, awesome!

I paired a zesty grilled chicken with the mild baby spinach that even a "non-green" eater can consume. For a splash of fun and something outside the New England norm I'm adding grilled peaches and the result of the sweet & zesty is a treat for the senses!

Don't worry - Yes, it's healthy and hits the protein and carb numbers with just the right amount of healthy fats. I like to serve this on a platter so it's visually appealing and you can take the colors and flavor favorites each person prefers. Check it out!

This recipe is a good source of protein, mainly from the chicken breast. Protein is essential for growth and repair of body tissues, production of enzymes and hormones, and maintenance of lean muscle mass.

The ingredients, provide a wide range of vitamins and minerals. For instance, spinach is high in Vitamin A and K, while cauliflower and lemon provide a significant amount of Vitamin C. These vitamins are crucial for various bodily functions such as immune function, blood clotting, and maintaining healthy skin.

Glorious cauliflower, (my fav!) leeks, and spinach in this recipe contribute to its high fiber content. Dietary fiber aids in digestion, helps maintain a healthy weight, and can lower the risk of diabetes and heart disease. Are you having trouble with belly bloat and or losing a few pounds??
